Recipe of the week

Lime and chilli dip

Ingredients - approximate
1 lime (juice + finely chopped zest)
3 large thai red chillis (finely chopped)
3/4 tbsp white sugar
150ml white vinegar (rice, wine...)
50 - 100ml water

Put all ingredients in a pot, + bring to a boil.
Boil on medium / high until the mixture has reduced and become sticky. Adjust sweetness/sourness as required.

Use as a dip for crispy, deep fried things, or let down with a little water for a quick sauce.
